A creamy salmon risoni / orzo – on the table in just 15 minutes. A real crowd pleaser – one for the kids and the grown ups!
Can you believe that you can make this Creamy Salmon Risoni in just 15 minutes? You really can. Leisurely too, not frantic manic cooking. My one condition is that you have all the ingredients out on the bench, ready for chopping, measuring etc. Because I can’t be accountable for how long it takes you to rummage around in your pantry to dig out a packet of risoni! 😂
This is a recipe from this month’s Super Food Ideas magazine, Australia’s top selling food magazine which just hit the stands. I feel very honoured that every month, I have a spread in the magazine and this month, the theme is 15 Minute Meals. Right up my alley! I love a challenge. I’ve done a whole heap of 15 Minute Meals here on RecipeTin Eats and I was keen to share more with Super Food Ideas readers!
Here’s the spread from this month! WOO HOO! Check it out – I got a little mention on the COVER this month! 🙊
The recipes included in the above feature in addition to this Creamy Salmon Risoni are as follows (starting top left):
-
Moroccan Lamb with Chickpea Couscous – You know I hate to play favorites….but to think that you can create a platter of food like this in just 15 minutes is just so cool, isn’t it??
-
Greek Chicken – Loaded with yummy Greek flavours in a tomato sauce studded with olives and finished with a sprinkle of feta. Makes my mouth water just describing it!
-
Chorizo Kale and Bean Soup – Kale doesn’t make much of an appearance around here because I’m not into “super foods” for the sake of it. But I think it’s a perfect match for this soup!
-
Shortcut Veal Schnitzel – YES you can make schnitzel without deep frying, with all the flavour and most of the crunch (and 5% of the mess too!). 🙂
-
Creamy Salmon Risoni / Orzo – that’s this recipe I’m sharing on my blog. Sorry guys, I’m only allowed to share one!
For this recipe, I use a store bought hot smoked salmon. Yes, it’s a bit of a cheat shortcut but I’m yet to master smoking fish myself at home and hot smoked salmon is so handy to have in the fridge because it lasts for ages and ages!
You can use ordinary salmon, but I really love the extra flavour edge that hot smoked salmon adds to this. It takes it from yum to super delish.
This recipe is for all those who come home after a long day and want to serve up a nutritious tasty meal for their family without spending ages in the kitchen. The beauty of this risoni is that you can swap out the salmon for any other proteins and up the nutrition with extra veggies – and I’ve provided notes in the recipe for suggestions.
But I kept this very simple because….well, it was part of a 15 minute meals feature! – Nagi x

Creamy Salmon Risoni / Orzo (15 Minute Meal)
Ingredients
- 1.5 oz / 40g / 3 tbsp unsalted butter
- 1/2 onion , diced (brown, white, yellow)
- 2 garlic cloves , minced
- 1 tbsp plain flour
- 2 cups milk (light or full fat)
- 2 1/4 cups chicken broth / stock
- 1 1/2 cups dried risoni / orzo (Note 1)
- 2 cups frozen peas
- 1/2 cup grated parmesan
- 6 oz / 185 g hot-smoked salmon , flaked into large chunks using 2 forks
- Parsley , chopped, to garnish
Instructions
- Melt butter in a deep skillet or pot over medium high heat.
- Add onion and garlic, cook for 2 minutes until translucent.
- Add flour and cook for 1 minute.
- Switch to a whisk and add half the milk. Whisk to dissolve the pasty onion mixture into the milk (about 20 seconds). Then add remaining milk, chicken broth, risoni and peas.
- Bring to simmer then turn heat down to medium so it bubbles gently. Cook for 5 minutes - stir occasionally for the first half then more frequently during the second half.
- At 5 minutes, take it off the stove - it will still be quite saucy (see video) but will reduce in the next steps and while serving.
- Stir through parmesan cheese, salt and pepper to taste. Then gently stir through salmon.
- Serve immediately, sprinkled with parsley leaves if desired.

You have sparked a love of risoni for this mum who eats one handed alot – perfect spoon food! The second time i made it i added a good whack of dill and the zest and juice of 1/2 a lemon, and i think it really complimented the overall flavor.
YES this is perfect for multi-tasking mothers!!! Your additions sound lovely Liz! 🙂
Can I used minute rice instead of the risoni?
Unfortunately I haven’t tried Jan. Sorry! N x
Hi. A follow-up. I tried the recipe and it is delicious, used instant rice. Can’t wait to make it again.
Awesome Jan!!! Thanks for the feedback!
Hi Nagi, We thoroughly enjoyed this for dinner again tonight. after being Abroad for a few weeks this dish was easy to pull together (I used tinned premium Alaskan Salmon). With my pantry staples, and fresh parsley from the garden. It’s always a winner, and very quick, easy to make and we love the flavours. JUST LOVE IT ?
I’m so glad you enjoyed this Vanessa, thank you for letting me know!! N x
Hi Johanna, so sorry for the late response! Any diced vegetable will sub fine – I think zucchinis would be ideal! Or stir through spinach!
The recipe was pretty good, but we thought it was a little bland. No one hated it, but no one went back for seconds. It was fast and easy to make, so I won’t give up on it just yet, but will try it next time with some tweaks to up the flavor profile. I’m considering adding dill, mustard, and a splash of white wine to compliment the salmon. We’ll see how it turns out. Sorry Nagi, your recipes are usually a hit for me!
Oh no! 🙁 I’m so sorry to hear that. Did you use hot smoked salmon?? And the parmesan?
Hi Nagi
We had this for dinner tonight – I used a tin of red salmon and then added approx 100gm of salmon gravlax that I put aside for tomorrow’s breakfast – just for presentation. It was very very tasty – as always, I double the recipe. Everyone was asking, “is this risotto or pasta?” As it’s the first time I’ve served risoni. But I really enjoyed the flavour and the texture. I’m looking forward to trying some of your other risoni recipes. BTW – we are having the Greek Slow Cooked Lamb for our Easter Sunday Lunch !
we all wish you a very Happy And Safe Easter x
Vanessa
Oooh! So glad you and the fam enjoyed this Vanessa!!! I do hope you enjoy the lamb – and HAPPY EASTER TO YOU TOO! N x
just back to let you know the lamb was ……OMG – delicious and so tender. No knife required. Served with the super crunchy potatoes, and I slow cooked some green beans, in tomatoes, onion, garlic – Greek style.
WOO HOO!!! I’m SO HAPPY Vanessa, thank you so much for coming back to let me know!!! N x❤️
congrats! That is super exciting! I will pop out and buy this mag today. This recipe rocks my world – love salmon and love quick easy Thursday night dinners. Fabbo!
Thanks so much!!! It’s so weird seeing my recipes in a magazine – but COOL WEIRD!!! 🙂
Thanks Madison! 🙂 I do hope you try it!!! N x
Oh Nagi, I love this recipe and congrats on being featured, too! Love all 30 minutes meal and it’s even better with 15 minutes meal. Comfort food done right!
Thank you so much Linda! N x 🙂
Nagi!
We had to (it’s a hard life) come on a quick trip to Perth this week, so guess what magazine I’m going hunting for tomorrow!!! I really want to see your cute little hands (and your great recipes, of course) made famous on those pages.
Love the recipe (love orzo, and it’s perfect for quick cooking like this). Also love the look of the fish recipe – somehow missed that, so must check it out! 🙂
Woah what? You’re in Aus??? When are you coming back for GOOD??? 🙂
This looks delicious and creamy, Nagi! Can’t believe how fast it comes together!
Thanks Sabrina!
Congratulations Nagi for your feature in Super Food Ideas! I’ll pick up a copy next time I’m at the supermarket! Yaaaay!
PS I LOVE risoni / orzo – I love that it cooks faster than risotto rice and i love the texture too! 🙂
I know! I didn’t even know about it until I hit uni and had to fend for myself and discovered everything that was fast to cook, from risoni to angel hair pasta!! 🙂
HUNK OF SALMON = HUNKS OF LOVEEEEE! <3 ha ha!
True that! 🙂
Hi Nagi,
What an awesome recipe! What grocery store did you get the hot smoked salmon? I live in SE Queensland & I haven’t seen it anywhere! Or is it tucked away somewhere that takes 25 min of searching to find it? 😉 I suppose regular smoked salmon would be to delicate for this recipe.
And in this house, the term ‘carb heavy’ doesn’t exist. In fact, I’d be tempted to serve this with some nice crusty bread!!
Can’t think of anything better than piling this on crusty bread! 🙂 Seriously, I am a CARB MONSTER. Hot smoked salmon is sold in Coles & Woolworths in the section where you find smoked salmon! It will work with smoked salmon except you would need quite a lot to be able to taste it. That’s why I went for flaked salmon!
What a great monthly feature! And I love this recipe, like the sound of salmon and orzo. And wow ready in 15, a must try.
Another great 15 minute meal!!
I always have orzo in the pantry and enjoy finding new, more healthy ways to put a simple meal together..
Thank you.. :O)
No worries Ross! Hope you try and LOVE it! 🙂
wow, fifteen minutes – I’ll be in on that! Plus, my husband buys me a side of salmon every so often and smokes it for me in the bush smoker he made himself….
NO!!! I am GREEN and SEETHING with envy!!!!?
How neat to be featured. This pasta is such comfort food.
Thanks Peter! you’re bang on, pasta IS total comfort food, isn’t it? 🙂
I love seeing your magazine spread! It must be so amazing to see your recipes and photos in print! I would buy them all up if I could 🙂
Add salmon of any kind and I’m a happy woman. I’m totally loving this quick and hearty risoni dish – perfect for a fantastic weeknight meal. It’s so crazy that you can make this in just 15 minutes! I may not have believed you if I didn’t see your awesome video 😛
Orzo is brilliant. Cooks so quickly!!! 🙂 I know you’re a fan of salmon, seen a few amazing salmon recipes coming out of YOU lately! 🙂
No I can´t believe this just took 15 minutes to make! Wowzers Nagi!
Loving the “little” video that you made for this too 🙂
Then, congrats on being mentioned on the cover of the Super Food Ideas magazine this month! That´s awesome!!
Thanks Jolene! I was pretty excited, I must admit!!! N x
Hi Nagi! Ever since you got us hooked on your Smoked Salmon Dip I keep a packet or two of smoked salmon on hand! 🙂 I so wish I could get that magazine here! As you know I don’t eat food just because it’s healthy, I want food that’s delicious and this certainly qualifies! Comfort food in such a short time is not always easy to come by. Thank you again!
Awww Dorothy, it really makes me so happy knowing that you try my recipes!! 🙂 I think think that this will be better made with a fillet of salmon – cooked – or a fillet of hot smoked salmon because it can be flaked more easily. Also smoked salmon is more expensive!!!! <3 N x
Hi Nagi! The salmon that I buy for your dip is a wild caught salmon fillet that is wood smoked. It is really good, a little pricey at $5,00 for 4 ounces, but it is worth it!
You use posh salmon for my little old dip? ?
