This is the most popular of all chicken breast recipes that I’ve ever published. It’s a JUICY Oven Baked Chicken Breast sprinkled with a magic simple seasoning, baked until caramelised. It’s simple, fast and incredibly tasty! This is a reader-favourite alongside Honey Garlic Chicken, this epic Parmesan Crusted Chicken and crispy Garlic Chicken.

A JUICY Baked Chicken Breast!
Though I always stand firm that brown meat is better than white – more flavour, more juiciness – lean chicken breast is a regular in my shopping trolley, week after week.
So today, I’m sharing my recipe for how I make Oven Baked Chicken Breast.
We can never have too many really great quick chicken breast recipes!
As simple as it sounds, if you whack a seasoned breast in the oven without thought, the chances are you’ll be chewing your way through dry chicken, furiously squirting over copious amounts of ketchup to try to salvage it.
It doesn’t need to be that way. Enter – a fabulous simple, magic chicken seasoning for baked chicken breast:

The Chicken Breast Seasoning
Made with just brown sugar, paprika, oregano, garlic powder, salt and pepper, the secret ingredient in this is brown sugar:
Makes more seasoning, so you can coat the breast thoroughly and give it a beautiful crust without overpowering it with lots of spices that need longer to cook than chicken breast does; and
Makes it juicy – the chicken sweat while it bakes, so you end up with wetness that makes the chicken more juicy than the usual baked chicken breast.
Yes it adds sweetness but don’t worry, this baked chicken breast is still savoury!

How long to cook chicken breast
A medium chicken breast will take 18 – 20 minutes to bake at 220C / 425F. Cooking it hard and fast at a high temperature is the secret to gorgeous caramelisation and ultra juicy chicken inside. No dried out breast around here!!
The seasoning for this chicken is actually a really great indicator for when the chicken is cooked to perfection. Basically, once the surface of the chicken is caramelised, it’s cooked to perfection inside so get it out of the oven!
My last tip for a truly great Baked Chicken Breast is to pound it to even thickness, either with a rolling pin, meat mallet or even with your fist (very therapeutic). This has the double effect of even cooking as well as tenderising the meat.
The secret behind this baked chicken is the simple, magic seasoning

Most popular of all chicken breast recipes!
This Juicy Oven Baked Chicken Breast is the single most popular of all chicken breast recipes I’ve ever shared.
But don’t believe me. Have a browse below of what others have to say!
Try serving this with a side of Garlic Butter Rice with Kale, pictured in post. One pot carb + veg side, with kale made delicious! Otherwise, try a flavoured Rice Side like Tomato Basil Rice or Mushroom Rice.
If you’re in the mood for potatoes, try this Lemon Potato Salad, a classic creamy Potato Salad or a lighter No-Mayo Red Potato Salad with Charred Corn and Bacon.
And for something fresh, Spring Salad or Creamy Cucumber Salad with Lemon Yogurt Dressing would go with the chicken beautifully. Else, simply drizzle steamed greens or a garden salad with Italian Dressing, Balsamic or French Vinaigrette. – Nagi x

LIFE OF DOZER
It’s just hanging there, taunting him. He sniffs at it, suspiciously….

Definitely gonna try the recipe. Sounds great. I would also love to have a great knife like that
I have a growing collection of your recipes. They are not too complicated, don’t have impossible to get ingredients, always work and are delicious! I would love to have this knife in my kitchen.
Hi Nagi, love your recipes and have tried quite a few of them – it’s great that they turn out nearly exactly as yours. I would love to win the Chef’s knife and enjoy using it when my 27 year old son and I cook together. He would get a lot of joy using a professional knife – he loves cooking and eating. Cheers! PS Sorry I can’t rate the recipe yet as I haven’t tried it.
I am desperate for a sharp knife! Im always complaining to hubby that the knives aren’t sharp. He tells me to buy a good knife but there are soooo many different knives out there I dont know which one to buy!! ALthough Im not too sure that a sharp knife is safe for me! I always seem to cut my fingers with the blunt knives! I think it’s because I use too much force with them! I love to cook and love you’re recipes!
I would love to win this knife, it would be amazing. I love your recipes and can’t wait to try this seasoning.

Oh this sounds soooo good, I can’t wait to try it. Would this work on chicken breast with skin on too ? I’m going to see.
That knife is absolutely stunning, I need a new Chefs knife badly. Mine is so old and used, and it’s got big dents in the blade that I haven’t been able to get out.
It sure would be nice to have such a beautiful knife to treasure.
Thank you
With a son starting his cooking career and a daughter moving out of home – how would I decide which one to gift it to – I may have to keep it!

I’ve had the pleasure of serving at Yokota Air Base in Japan. Purchased many items, such as stereo equipment, and a “Sunny XL”car, by Nisson, Japan is a beautiful country. Buying from the street vendors was always a night time feast. Japan to me signifies quality, honor to the elderly and respect (which you don’t see in the states). After two years had to leave, very sad day knowing what I was leaving behind and where my destination was, very sad. Have delighted to find you and the delightful recipes, my passion is cooking, would love and honor a authentic Japanese Chef’s knife. It would be held in the highest respect and care. Next would be a rice cooker, I remember visiting homes at 1 am, (to bring a popason who over indulged in the beer), his wife would not be too pleased with him, but she would provide a bowl of rice. The happiest time in my life, Japan (also the birth of my son). Thank you
I have always wanted a great set of knives and this would be a wonderful start as well as a super birthday present (March 20). Please enter me and thank you for all of your work to get your wonderful recipes to us.
Hey Nagi, that’s dinner settled tonight served with the spinach and almond rice. What an absolutely bomb of a giveaway. Would love love love this amazing beautifully crafted artisan Japanese knife especially since I would not be able to indulge myself in such a luxury kitchen item. Know it would be a dream to use…and the sharpening stone as well.
